How do you make ground-up crickets taste good?

The answer may be just a sprinkling of ginger and ras el hanout, a North African spice blend. And there’s chocolate.

Greg Sewitz, 22, and Gabi Lewis, 23, began making protein bars out of crickets when they were roommates at Brown University in Rhode Island. Mr. Lewis, a philosophy major who tried to follow a paleo diet (eating what our cave-man ancestor presumably ate and minimizing his sugary foods), couldn’t find a bar that fit his needs. “They were all like candy,” he said.

When Mr. Sewitz, a cognitive neuroscience major, attended a conference at which one of the speakers discussed insects as a sustainable food source, an idea was born.

According to the two men’s research, the insects are 69 percent protein by dry weight as compared with 31 percent for chicken breast and 29 percent for sirloin steak; they provide more iron than beef does and nearly as much calcium as milk. They produce one-eightieth the amount of methane that cattle do, and need one-twelfth their feed.

The roommates overcame the ick factor by freezing the crickets, roasting them and putting them in a blender. “There were cricket parts all over the place, and our roommates got a little weirded out,” Mr. Sewitz said.

Their reward was their first batch of cricket flour, a dusty brown substance that resembled brown sugar and didn’t taste like much. They combined it with almonds, dates for binding, honey for sweetness and raw cacao nibs for crunch.

After graduating in May 2013, the men, having by then moved to New York, decided to start a business called Exo (for exoskeleton). They turned to Kickstarter, to raise $20,000 in a month. They hit their goal in three days.

They then had to figure out how to make the snacks palatable to a wide audience. A mutual friend introduced them to Kyle Connaughton, 37, the former head of research and development for the Fat Duck in Bray, England, one of the most acclaimed restaurants in the world, known for pushing the culinary envelope. Mr. Connaughton and Heston Blumenthal, The Fat Duck’s owner, had once created a dish of fried mealworms and crickets injected with a mix of mayonnaise and onion gel.

Mr. Connaughton developed recipes that made sure each bar contained 10 grams of protein, the equivalent of about 40 crickets. Along with the original cacao nut flavor, the first line features peanut butter and jelly, and cashew ginger.

The two partners plan to sell the bars in natural-food stores and CrossFit-type gyms – places that attract the growing number of paleo lifestyle enthusiasts.

“At the end of the day, it’s a protein bar,” Mr.Sewitz said. “If it’s sustainable, that’s great, but it’s going in your body and you want to know that it’s good for you and tastes delicious.”

Cockroaches may hold key to next-generation antibiotics

PARIS: One of the hardiest insects around, the cockroach, may hold the key to next-generation antibiotics, British scientists hope.

The brain and nervous system of the cockroach and the locust hold nine molecules that are toxic to superbugs which are becoming resistant to mainstream drugs, Nottingham University, central England, said in a press release on Monday.

In lab-dish tests, postgraduate researcher Simon Lee found the novel compounds killed more than 90 percent of poisonous Escherichia coli and methicillin-resistant Staphylococcus aureus (MRSA) germs.

Work is underway to see how the molecules stand up against emerging superbugs such as Acinetobacter, Pseudomonas and Burkholderia.

Lee, who will be presenting the work at the Society for General Microbiology's meeting this week, said he was unsurprised that insects could naturally secrete their own anti-microbial drugs.

"Insects often live in unsanitary and unhygienic environments where they encounter many different types of bacteria. It is therefore logical that they have developed ways of developing themselves against micro-organism," Lee said.

The research is still at a very early phase. Many years of testing lie ahead if the promise continues to hold true.

Advancement of traffic, detriment to our health

There is always a trade-off to the level of technology in each era we live in. Speed and convenience are two of the major benefits we get from the "advanced" technology that we now enjoy, so to speak, compared to 50 years and earlier of living.

But, the price we have to pay for these?

We pay with our health, which is just one of the many fees "imposed to us forcefully".

Traffic pollution leads to increased pneumonia deaths

PARIS - Exhaust fumes from road traffic and other types of fuel combustion are closely linked to excess deaths due to pneumonia, according to a study released Tuesday.

Cross-referencing three sets of data atmospheric emissions, published causes of death and expected causes of death in England for the period 1996-2004, George Knox of Birmingham University attributed some 4,000 extra pneumonia deaths each year to engine pollution.

That is the same number of people killed during the infamous week-long London smog of December 1952, he said.

Levels of air pollution varied substantially from one local administrative region to another, with correspondingly high mortality rate linked to pneumonia, reported the study, published in the Journal of Epidemiology and Community Health.

Nearly 390,000 deaths over the eight years studied were officially attributed to pneumonia.

"Many 'pneumonia' deaths were probably caused by direct chemical injury, as in the 1952 London smog, and thus are better regarded as 'acute respiratory distress syndrome' or 'acute lung injury'," Knox concluded.

Even after potentially confounding social factors such as tobacco consumption were taken into account, pneumonia "was strongly and independently linked to emissions," he told AFP in an e-mail.

Excess death from Chronic Obstructive Pulmonary Disease and rheumatic heart disease, both characterised by lung failure, could also be precipitated by engine exhaust.

While it is possible that there is a similar proportion of excess pneumonia deaths in other countries with similar levels of pollution from fossil fuel combustion, "extrapolation is impossible," Knox said.

"I think every country has to do its own studies of geographic distributions of pollutants and individual deaths," he told AFP. - AFP/ar

Doctors in Britain looked at five studies in which children were monitored from infancy to early childhood to see if vitamin D supplements made a difference to the risk of becoming diabetic.

The risk of developing the disease was reduced 29 percent in children who took extra vitamin D as compared to those who had not.

Diabetes is a chronic condition in which the body does not produce enough of the hormone insulin, or cannot make proper use of the insulin it does produce, a condition called insulin resistance.

In Type 1 diabetes, so-called beta cells in the pancreas that produce insulin are destroyed in early childhood by the body's immune system.

The disease is most common among people of European descent, affecting around two million Europeans and North Americans, and for reasons that are unclear is becoming more widespread.

Type 2 diabetes, which is far more common, is linked mainly with an unhealthy diet and sedentary lifestyle. It is becoming epidemic in scale in many developed or fast-developing countries.

Heart attacks reduced considerably in countries where lighting up is banned

LONDON - The ban on smoking in public places could reduce heart attacks by more than a third in some parts of the world, say researchers.

Two independent health reviews have found that heart attack rates dropped steeply in areas where bans have been introduced, with one reporting 36 per cent fewer cases three years after smoke-free legislation came in.

Smoking in pubs, restaurants and other public spaces was banned in England and Wales in July 2007, a year after similar laws were introduced in Scotland.

The Scottish ban led to a 14 per cent fall in the number of people being admitted to hospital with a heart attack the following year.

A Department of Health study of heart attack rates in England and Wales is not due to report until next year, but experts believe the number of cases in the regions has already fallen by around 10 per cent as a result of the smoking ban.

The latest reviews, which draw on published studies from the United States, Canada, France, Italy, Ireland and Scotland, suggest heart attacks in Britain will fall even further over the next two years.

"While we obviously won't bring heart attack rates to zero, these findings give us evidence that in the short to medium term, smoking bans will prevent a lot of heart attacks," said Dr James Lightwood, a health economist at the University of California in San Francisco, and co-author of one of the reviews, published in the US Journal Circulation.

Dr Lightwood analysed 13 published reports on heart attacks in countries or states where smoking bans have been introduced.

A year after the bans were introduced, heart attacks had fallen by an average of 17 per cent. After three years, the number of heart attacks had dropped by 36 per cent.

"This study adds to the already strong evidence that second-hand smoke causes heart attacks, and that passing 100 per cent smoke-free laws in all work places and public places is something we can do to protect the public," Dr Lightwood said.

Heart attacks may fall more modestly in Britain than other European countries because many workplaces imposed smoking bans before nationwide laws were passed.

A second review, by Mr David Meyers at the University of Kansas, drew on 10 studies from the same regions.

His report, which is published in the Journal of the American College of Cardiology, found heart attacks had fallen by 17 per cent on average a year after smoking bans were imposed.

Most of the benefit was seen among young people and non-smokers.

While smoking doubles the risk of heart attack, passive smokers, who regularly inhale tobacco fumes from others, have around a 30 per cent higher risk of getting a heart attack. The Guardian
