FROM my experience of over 40 years as a former environmental health officer, no amount of enforcement action or complaints against unhygienic food practices will prevent the recurrence of such outbreaks if stallholders do not take ownership of their responsibilities.
How can officers check on thousands of stallholders islandwide, 24/7? The onus of food safety must fall on the hawkers.
I suggest for harsher penalties against errant hawkers in the form of heavier fines and licence revocation.
